Healthy Chocolate

Almost everyone loves a good chocolate recipe. I’ve tried many versions of skinny chocolate. Some I’ve loved, others, not so much. I decided to try making my own version of Skinny Chocolate the other night, and I am loving the results. I hope you do too! I do tend to make things in large batches, so feel free to scale back and make a smaller version.

Ingredients:

2 cups cold-pressed coconut oil

1 cup cocoa powder. I use Rhodelle

1 cup defatted peanut flour Available here or  Here

¼ cup THM Super Sweet Available here

½ cup Erythritol Find it here

½ Tbsp Caramel extract Find it here

½ Tbsp Maple extract Find it here

½ tsp Brown Sugar Extract Available here

½ Tbsp Vanilla extract

¼ tsp mineral salt Available here

Directions:

Simply mix your melted coconut oil with rest of ingredients. I threw all my stuff into my vitamix container, blended it well, then pour it into molds. I refrigerated it until firm, then took it out of the molds, and have it stored in the freezer.
