Trim Healthy Macaroni and Cheese

My husband is a meat, potatoes, and pasta kind of guy. Pasta is a dish he wants often, so I cook it often here. I choose to personally keep my consumption to occassional use, but I do enjoy it from time to time. We switched several years ago to only buying Dreamfields Pasta*. It is supposed to be formulated in such a way that the carbs are protected. You can enjoy them in and S or E setting with Trim Heathy Mama.  There are considered a Frankenfood, but if you aren’t a purist and need easy options your family will enjoy, they are approved on the THM Plan. You want to be sure to pay attention to portion sizes, and limit your use to once a week or less. If you are diabetic, you may want to test and see how your body responds to it before making it a staple. Some people have no issues with it, others have reported they do see a spike in blood sugar when using it. It is not recommended that you reheat Dreamfields pasta on THM, so either make just enough for your family, or feed the leftovers to your growing children that don’t need to watch their weight. Another option is to enjoy it cold. Turn it into pasta salad.

This is how I make our macaroni and cheese. It does seem basic, but it is one we have enjoyed over and over again. I like the cottage cheese being in there as it is adding protein to the mix. I do tend to make a large batch of it as I have growing teenagers and macaroni and cheese is a favorite leftover of theirs. (Might have to do with growing up in a family with 15 children too. Cooking in bulk was just a way of life.) If you want to make a smaller batch, simply half the ingredients listed.

Ingredients:

2 13.25 oz boxes Dreamfields pasta*

1 24 oz tub of cottage cheese

2 cups cheddar cheese

¼ -½ cup of either half and half or cream.

Directions:

Cook pasta according to package directions, drain water. Add 24 oz tub of cottage cheese and stir well. Add grated cheese and the half and half or whipping cream. Stir until well mixed and melted. Enjoy!

This makes 13 servings if you are following the recommended serving size on the Dreamfields pasta box. This is a Heavy S on the Trim Healthy Mama plan as it includes cheddar cheese and half and half or cream.

*Heavy S meals are allowed and enjoyed on the THM plan, but if you find you are stalling or even gaining weight, you may want to be mindful of indulging in them, and keep them for occassional treats.

Optional Ideas:

  1. We like to add seasoned taco meat to our and make it a casserole type meal. Sometime we will throw the chili beans in there too. You want to keep beans to ¼ cup or less in an S setting. 
  2. We will take leftover chicken, cut up a rotisserie chicken, and add it to the macaroni and cheese for a quick easy meal too.
